Often referred to as the "Queen of Olives", Kalamata are renowned for their firm flesh and unrivaled taste. Grown in the heights of Neochori-Hithomi, in the Greek region of Peloponnese; the family olive groves, some of them over 300 hundred years old, prosper on a limestone terrain where the water is plentiful and key to ensuring the quality of the olives.
Thanks to this brine recipe, the strength of character of the Kalamata olive is fully released. It goes hand in hand with stewed and oven-baked dishes.
